Hummus

A really easy and healthy recipe. Great to make with your own Olive Oil and freshly picked lemons.

Ingredientshummus chickpea

400g jar of chickpeas or Grao do bico 
4 tablespoons liquid from jar of chickpeas
3-5 tablespoons lemon juice (depending on taste)
1 1/2 tablespoons tahini
2 cloves garlic, crushed
1/2 teaspoon salt
2 tablespoons olive oil 

 

Method

  1. Drain the chickpeas and set aside some of the liquid.
  2. Combine the remaining ingredients in a hand blender or food processor.
  3. Add 1 tbsp of liquid from chickpeas.
  4. Blend for 3-5 minutes on low until thoroughly mixed and smooth, adding more of the drained liquid as needed to get your preferred texture.
  5. To serve place into a bowl and sprinkle with parsley or paprika, to your own taste. Serve with vegetable strips, crisps or pitta bread to dip.

 

Additional Noteshummus

Chickpea is Grao de bico in Portuguese and available in glass jars from every supermarket.

Tahini is sesame seed paste and in Portugal it is available from ELeclerc and specialist health food shops.

Hummus is often served with a dimple in the middle filled with Olive Oil.

You can make different flavours by adding sun dried tomatoes or fresh herbs. It's so easy to make it really is worth experimenting.
